ingredients:
PORK MOSTACCIOLI
2 lb. boneless pork roast1 onion, chopped
2 to 3 T. olive oil
1 c. water
1 16 oz. can tomato sauce
1 12 oz. can tomato paste
1 16 oz. can chopped tomatoes
1 T. oregano
1/2 T. basil
3 T sugar [I did not use any sugar)
1 t. garlic minced
salt and pepper to taste
1 box mostaccioli noodles
2 c. shredded mozzarella
In olive oil, brown pork roast on all sides with onion. Next time I would add onion when I am browning the last two sides of the roast.
Add 1 C. water, and rest of ingredients through the salt and pepper. Cook, covered, over low heat until meat is tender enough to shred----4 hours or so. [your house will smell divine]
I removed the roast to the baking dish and shredded it using two forks. Return shredded meat to sauce.
Cook noodles, drain, and add them to meat mixture.
Spoon into 9x13 pan and top with shredded cheese.
Bake at 350 degrees about 1/2 hour until cheese is bubbly and lightly browned.
Can make this ahead and freeze. I froze some before topping with cheese and baking it. You can use more or less pork depending on your personal preference. If you use a larger roast, you may want to throw in some extra tomato sauce.
10-12 servings. This is very hearty comfort food.

I remember that snow storm because here was thunder. The first time I had ever heard that during a snow storm. I think it was the only Christmas growing up that we had just the family for dinner. Nobody could make it any place!

That looks fabulous, JoAnn. Like Carron, I was not familiar with mostaccioli pasta. It will be interesting to see if my grocery store carried them and I've just never noticed their presence.

only one of my regular stores had this pasta...you can use penne or ziti instead.
